  1. Place chicken in a bowl and add all the ingredients (except the oil). Mix well and marinate in the fridge for 4 hours or overnight.
  2. Heat oil and add the chicken and potatoes. Cook on high heat (uncovered) for 30 minutes till the water is almost completely dry.
  3. Preheat oven to 200C.
  4. Place the chicken and potatoes in a roasting tray (with a wire rack ideally).
  5. Bake in the oven (uncovered) for 15 minutes.
