  1. Slice the cucumber lengthwise and scoop out the seeds with a spoon or melon scooper.
  2. Grate the cucumber and leave it in a sieve to drain out all the water.
  3. Put the garlic clove, dill, mint, lemon juice, olive oil, salt and pepper in a food processor. Mix well.
  4. In a bowl whisk the yoghurt, and add the herb mix and drained cucumbers.
