  1. Pre-heat oven to 170C.
  2. To prepare the chicken, slice it in half lengthwise and hammer to tenderise.
  3. Heat a medium frying pan with 1 tsp of oil and add garlic.
  4. Add spinach and cook till the spinach wilts and water content has seemed to dry out.
  5. Take off the heat and add set aside to cool.
  6. Add feta to the cooled spinach.
  7. Put spoonfuls of the mixture onto the chicken. Wrap to seal and secure with toothpicks.
  8. Roll in breadcrumbs.
  9. Place in a dish and pour over melted butter.
  10. Bake for 30 minutes (until the chicken is cooked through).
