  1. Mix the prawns, salt, pepper, and cornflour together.
  2. In a wok heat oil and deep fry the prawns for 1 minute on high flame (until half cooked).
  3. Strain the prawns out of the oil and set aside.
  4. Prepare the seasoning: sesame oil, fish sauce, soy sauce, brown sugar, Thai curry paste, and a pinch of salt.
  5. In 2 tbsp of oil fry the garlic till light/golden brown.
  6. On high flame add butter mushrooms and fry for another 5-10 seconds.
  7. Add spring onions and green chilies. Immediately add the seasoning and stir fry to mix well.
  8. Add prawns and stir well.
  9. Add water and stir well. Cook for a few minutes (till prawns are cooked).
  10. Add coconut cream and ground peanuts. Mix well.
  11. Add coriander leaves and remove from flame.
