  1. In oil add whole garam masala and onions. Fry until the onions are light brown in colour.
  2. Add ginger & garlic paste, coriander powder, chilli powder, turmeric, and lentils. Fry for a minute.
  3. Add water and leave to cook (covered) for an hour.
  4. When the lentils are tender, add tomatoes and cook on low flame till they are done (about 30 minutes).
  5. Add the bottle gourd (lauki). Cover and cook on low flame till it’s tender (another 30 minutes).
  6. Season with salt.
  7. Garnish with coriander leaves and green chillies.
  8. Serve with boiled white rice.

Note:

  • In the featured image you will notice I used zucchini instead. It’s from the same gourd family so substitutes well.
