  1. Wash and pat dry the fish fillets.
  2. Line a non-stick tray with baking paper.
  3. Spray the fillets with oil and lay them out on the baking tray.
  4. Preheat oven to 200C.
  5. In a frying pan, melt the butter on very low heat and add the minced garlic, Worcestershire sauce, fish spice, pepper, red chilli flakes, and finely chopped coriander leaves. Cook on very low heat for 2 minutes.
  6. Use a pastry brush to lightly coat both sides of fish with the butter and herb mixture.
  7. Add the breadcrumbs and parmesan cheese to the remaining herb butter mixture. Stir well.
  8. Portion out the crumb mixture equally and spread over the fillets.
  9. Bake for about 12 minutes. The fish will be opaque and flake easily with a fork when done.
  10. Prepare your sides. I made steamed, salted edamame and lightly roasted carrots.

 

Notes:

  • I bought my fish spice/rub from a Middle Eastern store close to home. You could replace this with Cajun seasoning or a different spice rub if you want.

  • You can use any white fish you like. Baking time may vary depending on the type of fish you use.
