  1. To make the dressing, mix the olive oil, balsamic vinegar, maple syrup and mustard. Set aside.
  2. Cut the apples into even chunks.
  3. Finely slice the onions.
  4. Roughly chop the walnuts.
  5. Crumble the feta.
  6. Mix together all the salad ingredients. Add the dressing, toss and serve immediately.

Notes:

  • If you’re preparing the salad in advance, add the dressing just before you serve it.
  • You can substitute feta cheese for goats cheese, walnuts for almonds, maple syrup for honey or sugar, and balsamic vinegar for apple cider.
