  1. Preheat the oven to 180C.
  2. Prepare your cupcake pans with liners.
  3. Sift the flour, baking powder and cocoa powder in a bowl. Set aside.
  4. In a separate bowl, use an electric beater (or stand mixer) to beat the butter until creamy (about 2 minutes).
  5. Add the sugar and beat on medium speed for another 30 seconds or 1 min until mixed well.
  6. Add eggs one at a time beating lightly to incorporate.
  7. Add vanilla extract and the flour mix. Fold by hand using a spatula until just combined. Do not over-beat the batter.
  8. Pour into cupcake liners (fill only ¾ way up).
  9. Bake for 20 minutes (or until an inserted toothpick comes out clean).
  10. Top with this delicious chocolate buttercream frosting if you want to fancy it up.
