  1. In a medium bowl, whisk the eggs. Beat in the milk, sugar and vanilla essence.
  2. Slice the brioche bread into four 1″ thick slices.
  3. Place one slice of bread in a deep plate and using a spoon gently pour some of the egg mixture over the bread slice. Make sure to cover all of the bread but not drench it.
  4. Allow to soak for 2 minutes. Gently flip using a spatula. Allow to soak an additional 2 minutes. Tip the pan around if needed to help the bread absorb the egg mixture. The bread should soak up all of the egg mixture.
  5. Heat a medium frying pan on medium to medium-high heat. Melt 1 tbsp of butter in it (make sure it doesn’t burn).
  6. Gently transfer the soaked bread to the pan. Cook until the bottom is golden brown, about 3 minutes on each side. If you feel like your french toast is browning too quickly, turn the heat down.
  7. Repeat steps 3-6 with the remaining slices.
  8. Serve immediately. Top with butter, maple syrup, and fresh berries, or use your favourite toppings.
