  1. Wash the okra. Pat dry. Cut into fine slices (not too fine, but not too thick either).
  2. Heat oil (don’t be stingy!) in a large frying pan.
  3. Add cumin seeds and fry for a few seconds before you add the okra.
  4. Add salt and chilli flakes. Cook on medium heat till water dries and the okra gets crispy. Do not stir too often or the okra will get slimy.
  5. Remove excess oil.
  6. Add fried onions.
  7. Serve with roti or rice. Pairs well with lentils (masoor daal).
