My nephew made these pancakes using my original pancake recipe and added some frozen blueberries to them. He got a bit heavy-handed with the stirring and the pancake batter turned blue. Thus were born Smurf Pancakes! 🙂Â
Directions
- Combine all dry ingredients.
- Make a well in the centre of the mixture.
- In a separate bowl beat the egg. Add milk, oil and vanilla essence.
- Pour the egg mix in the dry ingredients and mix well. The batter should be slightly lumpy. Let the batter rest for 15-20 minutes.
- Add the frozen blueberries and mix well.
- With a ¼ cup measure pour batter into a lightly greased frying pan. Cook over medium heat for about 2 minutes on each side (or until golden brown).
